It feels like my days just get busier and busier lately. We’ve been clearing out our basement in preparation for my mother-in-law coming to stay with us, and I’d forgotten just how many boxes of stuff are stacked down there. Don’t judge me, but I know some of them haven’t been opened since I packed them the last time we moved 5 years ago. I’ve been wanting to declutter for a long time. Not like this of course, but silver linings, right?

At any rate, I just haven’t had much energy lately for any kind of fancy cooking or experimentation. These days anything I cook needs to be really, really easy and require minimal preparation. Well folks, this is both! I call it Simply Baked Chicken because, well, it is.

This simply baked chicken is incredibly quick and easy to prepare. You'll love the crispy skin! (paleo, gluten-free, Whole30)

Start by preheating your oven to 400 degrees. Put 10 to 12 chicken thighs or drumsticks with the skin on in a large mixing bowl and toss with 4 tablespoons of olive oil, 2 teaspoons each of garlic powder, chili powder, dried basil, ground black pepper, and 1 teaspoon of sea salt. Make sure the chicken is evenly coated in the oil and seasonings. Lay the chicken pieces skin side up in a single layer in a baking dish and bake for about 50-60 minutes or until the chicken is cooked through.

While the chicken’s baking, take the opportunity to prepare your side dishes or veggies. May I suggest roasted cauliflower or coconut mashed sweet potatoes?

My favourite part is the skin. It’s so flavourful and crispy fresh out of the oven! I usually do a double batch so there’s lots of chicken left over for hubs to take to work, and lunch for me and the girls the next day. Still very tasty, but the skin loses its crispy crackle after sitting in the fridge overnight.

Simply Baked Chicken

Ingredients
  

  • 10 chicken thighs skin on
  • 4 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 2 teaspoons chili powder
  • 2 teaspoons dried basil
  • 2 teaspoons ground black pepper
  • 1 teaspoon sea salt

Instructions
 

  • Preheat oven to 400 degrees.
  • Place chicken in a large mixing bowl and add olive oil and spices. Mix well so chicken pieces are evenly coated.
  • Lay chicken skin side up in a baking dish and cook for 50-60 minutes or until done. Skin should be crispy and golden brown.
